As vegans, Ron and I so don’t have this problem and haven’t met a vegetable we didn’t like. But many people grew up on a traditional meat and potatoes diet. Those were certainly staples at my childhood dinner table, with the occasional dashing of broccoli and green beans. However, when you know better, you do better and this case, eat better. Today, the cornucopia of veggie options is astounding and, is it just me, or are we literally discovering veggies we never knew existed?
While many of us relish in going out on a menu-limb by trying new dishes when dining out, some people are reluctant to gamble with their taste buds. And, the majority of us have no idea where to find dried cholla buds, burdock root, sea vegetables or low-oxalate greens – let alone know how to cook and serve them. Meet Dr. Cowan

Organic Food, High Vitamin & Mineral Content
The vegetables in Dr. Cowan’s Garden powders are grown on biodynamic farms, which if you aren’t aware, have an even higher standard than organic farming. These vegetables are harvested at peak flavor and quality and dehydrated on low heat, around 120 degrees. Low-heat dehydration retains most of the vitamin and mineral content of the vegetables. The greens are steamed before drying to release anti-nutrients, and the beets, pumpkins and winter squash are cooked to maximize flavor and digestibility. Once dried, the vegetables are ground into powders and transferred to Miron violet-glass jars as soon as possible.
Most of the vegetables we use are “beyond” organic: They’re biodynamically grown or sourced from other certified organic farms. The Napa garden, where we grow ashitaba, perennial greens and summer savory, is small, and at this point, there is no practical way for us to get certified, but the vegetables there are grown in hand-dug and hand-weeded beds. The vegetables are picked at optimal ripeness, usually very early in the morning, when they are most potent. We use non-GMO seeds and, often, heirloom seeds.” ~Dr. Cowan
Unlike taking vitamins and supplements which typically contain additives like maltodextrin, soy flour, calcium stearate and other stabilizers, Dr. Cowan’s powers maintain virtually of nutritional value with additives or pesticide chemicals. According to the USDA, most of the nutrients (like B vitamins) are at around 90 percent levels in dehydrated vegetables. The only exceptions are vitamin C, which is at 60 percent, folic acid at 65 percent and thiamine at 85 percent.
